Nasi Lemak (Malaysia National Dish) for Toddlers

Kid friendly version of our national dish for your little one, by @nomnomwithjaymie 

 

Ingredients:

Nasi Lemak (serves 2)
  • 1 cup jasmine rice 🍚
  • 1 cup coconut milk (unsweetened)
  • 1 pandan leaf
  • 1 small piece of fresh ginger (about 1 inch)
  • 1 small onion
  • chopped 2 garlic cloves
  • 1 stalk lemongrass
  • sliced 1/2 cucumber 🥒
  • sliced 1 boiled egg 🥚
  • 2 tablespoon fried anchovies (ikan bilis)
  • 2 tablespoon toasted peanuts 🥜
  • 1 packet of non spicy strawberry sambal (from @bytqahnasir) 🌶️🍓

 

Method:

Wash and rinse the jasmine rice, then cook it with the coconut milk, pandan leaf, ginger, onion, garlic and lemongrass. You can use a rice cooker or stovetop. While the rice is cooking, prepare the toppings as mentioned. In a small saucepan, heat the sambal sauce over low heat. Once the rice is cooked, remove the pandan leaf, lemongrass, ginger slices and garlic.

To serve, place a scoop of the fragrant coconut rice on a plate. Arrange the sambal, cucumber slices, boiled egg, fried anchovies and toasted peanuts on top.

Serve warm and enjoy your toddler-friendly Nasi Lemak!
